Recipe: Bhindi (Okra) Fry

Ingredients:
  • 2 cups Okra
  • 1 medium onion
  • 2 Tbsp Vegetable Oil
  • 1 tsp cumin seeds
  • ½ tsp turmeric powder
  • ½ tsp cayenne or hot red pepper powder
Instructions:

Wash and completely dry the okra. Cut it into ¼-inch rounds and let stand for 10 minutes. Slice the onion.

Heat the oil and add the cumin seeds till they splatter, then add the onions and fry until transparent –just a couple of minutes. Then add okra and stir.

Cover and cook for 5 minutes on low heat, then add turmeric, cayenne, and salt to taste.

Cover and cook for another 5 minutes, stirring occasionally.  Serve hot and enjoy!
